lets say a catholic woman is married to a catholic man, but then down the road of marriage decides that she wants to convert to lets say....................... Islam, but her husband will have absolutely nothing to do with converting.
According to Islam, it's my understanding that a mulsim man may marry a woman of jewish or christian faith, but a muslim woman may ONLY marry a muslim man. Well what is the Catholic woman to do now that she is allready married? Can she not convert?

A muslim woman is only allowed to be in the marriage contract of a muslim man. In the time of Hadhrat Muhammed (SAW) women who did reverted and their husbands didn't, left their husbands.
But still she can revert, even if she doesn't leaves her "husband", when a non muslim reverts, her marriage with the non muslim automatically nullifies.

Ok, so now lets say she converts, and stays married to this man even though according to Islam the marriage is nullified, would this relationship be haram?

Yes, and children too. She should try her best to tell her husband about islam, and pray to Allah so that he may revert too.

This is one of the major trials a Muslim woman may go through. I assure u the Messenger's (صلى الله عليه وسلم) daughter Zainab senior went through this. She was married to Al A`as who did not join her to the safe shore of Islam. her father warned her openly from taking him as a husband. The test is for the woman to decide. Is it worth not to rescue herself when she is sure that Islam is the rescue for a man? Is it worth to compare Allah with a servant of Allah? Even after she knows the truth. Well sister. I know it is hard, we are human. But a Muslim woman simply can not take a non Muslim man as a husband. As Ali said she shall just reveal her intentions to the man, give him the option, make sure if he joins that he joins only for the sake of Allah (his intention should be Allah and not the woman), if not well Allah has countless means to comensate her. U think that one willingly leaves worldly affairs in the name of Allah the Generous and He shall not provide even what one can never imagine? I doubt is sister. He is there for His Creation to return to His path. And He is always the All Capable of taking care of all things.

Allah makes u meet people to exchange roles in each other's lives, He takes u from one place to another to learn something, or help someone, or been helped. He is there for all of us.
